Hello fellow humans, My name is Matt, and I used to do IT stuff. Now I run a Plant-Based food trailer out of Littleton, Colorado. (Opening Early 2026)

This trip stared out a few years before covid, when my Wife Jennifer suggested we try the whole “Meatless Monday” thing. After some discussion, we decided we would do it, but try to replicate meals we loved from the various places around this beautiful land. I don’t do anything half-assed, so I perfected a few recipes, did some time in a real kitchen, and found a trailer on Craigslist.

The trailer had good bones, but it was a little worse for the wear, and let’s just say it had a face only a mother could love. I’m dressing it up a little with the guys from PGI, so I’ve attached a little preview as of January 9th, 2026.

The Zippy Hippie can’t wait to serve you “Flashback” worthy food.
